Promara is one of Cyprus’s oldest and most distinctive indigenous white grape varieties. Sourced from ungrafted, handpicked vines in the sandy-loam soils of Agios Ioannis and Polemi (700–900m altitude), this wine reflects both tradition and purity of place.
Vinified with cold soak and careful yeast selection, Promara spends nine months on lees in stainless steel tanks, gaining texture and character while preserving its fresh, vibrant fruit. The nose reveals elegant aromas of pear, melon, straw, and a delicate touch of flint. On the palate, it shows both freshness and depth – a balance of fruit-driven charm and subtle mineral complexity.
Exelixis – meaning “evolution” in Greek – is a refined white blend that truly lives up to its name (exelixis means evolution in greek), offering a journey that evolves with every sip. Crafted from Promara, Sauvignon Blanc, Chardonnay, and Xynisteri, it originates from ungrafted, handpicked vines in the high-altitude vineyards of Pelendri and Kato Milos (1,200–1,440m).
Grown in sandy, volcanic, and clay soils, the grapes undergo cold soak and barrel fermentation with carefully selected yeasts, before maturing for six months in a mix of French and American oak.
On the nose, Exelixis opens with bright aromas of lime, melon, pineapple, and delicate hints of white chocolate. On the palate, it continually evolves – starting with fresh citrus zest, moving into lush tropical fruit, and finishing with subtle oak and creamy texture. This layered progression makes each sip more captivating than the last.
